Gooey Red Velvet Crinkle Cookies

8oz cream cheese, softened
1 stick butter, softened (if salted, do not add salt listed)
3/4 c brown sugar
1 c sugar
1 egg, 1 egg yolk
1.5 T vanilla
1 1/2 t gel based red food color 

2 1/4 c + 1 T All Purpose Flour
3T cocoa powder
1t salt
3t baking powder

1c sifted powdered sugar

Beat together cream cheese and butter until incorporated. Scrape bowl. Add both sugars. Beat until incorporated and light in color. Scrape bowl. Add eggs, vanilla, food coloring. beat until well combined. Scrape bowl. 

In separate bowl, whisk together remaining dry ingredients. Add dry to batter slowly and mix just until it comes together. It will be sticky. Chill in fridge for 2 hrs or overnight.

Preheat oven to 325.

Scoop 1” balls, roll in powdered sugar, place about 2” apart on pan and bake 12-14 minutes.

Let cool completely on pan. They should still be gooey in the very middle.
