Ganache + White Chocolate Filling
After sharing the Buttermilk Dark Chocolate Cake recipe, I had some questions about what icings and fillings I use with it.
Well, here they are! In addition to the whipped meringue buttercream, I use chocolate ganache, and white chocolate filling, to turn it into a triple chocolate tower of delight.
Chocolate Ganache
2c (16oz) Semi Sweet Chocolate Chips
1 3/4c heavy cream
Heat heavy cream in a saucepan just until it simmers.
While that’s heating, measure your chips into a bowl large enough to hold both, with room for whiskey. I mean whisking. I actually typed that. Leaving it.
Once heavy cream has simmered, remove from heat and immediately pour over chocolate.
Let it sit for a minute or two, then slowly whisk until it all melds together.
From here, you can use it as a glaze, and pour over a cake.
To use as filling, let fully cool to room temp.
White Chocolate Filling
Let me preface this with the fact that I’m a bit of an ingredient snob. I went to culinary school, and I can make a mean pastry cream for filling… but this, its so damn good and takes 30 seconds. So sometimes we compromise on our beliefs, it seems.
1 box of Godiva White Chocolate pudding (Locally I only find it at Publix, praise be)
2c Half and half, not milk.
Mix according to box instructions.
Admire fancy vanilla specks.
Let set in fridge.
NOW, in order to use this as a cake filling, you will need to pipe a border of icing around the perimeter of the cake layer. I use a large, 1M piping tip for this. You could use a ziplock bag, and cut the corner to about a half inch opening, and pipe your border that way as well, but there will be less control.
Building Triple Chocolate Cake
Level your chocolate cake layer.
Spread a thin layer of ganache to seal in crumbs.
Pipe buttercream border.
Fill with white chocolate filling.
Repeat for each consecutive layer.
Mix in enough ganache to your liking in the buttercream to make chocolate icing.
Ice cake.
If any ganache is left, use as a glaze on top.
